Black bear pizza
Black bear pizza. Nothing beats homemade pizza! This recipe shows you how easy and fun it is to make your own pizza, while usingbear sausage to give it a “wild” touch. Although we use bear meat in this recipe, we strongly encourage you to try all kinds of wild game meats and ingredients! Recipe and instructions below!

Preparation time: 20 minutesCooking time: 5-7 minutesIngredients- Bear sausage (removed from casing)- Shallot (sliced) (or small red onion)- Cremini mushrooms (sliced and lightly sautéed)- Tomato (sliced) – Italian seasoning (if the sausages are not already seasoned)- Buffalo mozzarella cheese (or low-moisture mozzarella)- Fresh Parmesan cheese (grated)- Pre-made pizza dough (2 days)- Flour- Fine corn flour- Salt and pepper- Sauce : 1 can crushed tomatoes (chunky style, lightly drained if possible),-1 Clove garlic (diced),-Olive oil,-Salt and pepper.Instructions1. Preheat pizza oven to 600-700°.2. Prepare the sauce: mix all the sauce ingredients and leave to rest in the fridge.3. Working with 2-day-old pre-made pizza dough, which has been brought to room temperature for at least 2 hours, start working the dough in a circle on a floured work surface. After the first stretch, leave the dough to rest for at least 10 minutes, covered with cling film to prevent drying out. You’ll need to work the dough at least once more, maybe even 2 or 3 more times, depending on the age and temperature of the dough. Let it rest for 10 minutes between stretches. For a thin-crust pizza like this one, you need to get the dough as thin as possible without breaking it, while keeping the outer edges a little thicker to create a crust.4. While the dough is resting, cook the bear sausage. First remove the sausage meat from the casing and place it in a hot cast-iron skillet with oil, brown the sausage over medium-high heat, seasoning it with S&P and Italian seasoning as it cooks. Then set aside.5. Optional: Sauté mushrooms in a pan with S&P and oil.6. When you’re ready to top the pizza, place the stretched dough on a pizza tray. Personally, I prefer bamboo or wood to metal. Be sure to dust the baking tray with cornflour or fine flour before placing the dough on the tray. The corn flour will help it slide more easily and give your dough a little extra crunch. Season the dough with salt, then with pizza sauce, and finally with the toppings of your choice.7. Place the pizza in the preheated pizza oven. Keep a close eye on the pizza, turning it over as it cooks so that it browns evenly. This should take between 5 and 7 minutes for a thin-crust pizza, longer for a thicker crust. Once the pizza is cooked, remove and add grated Parmesan cheese before serving.Recipe by Michael E. Higgins
