Chimichurri of venison/smoked venison

Preparation time: 20 minutesCooking time: 60-90 minutes (depending on thickness of meat)

Ingredients

– 1 venison fillet or rump roast (without silver skin)- 5 tablespoons butter (melted)- S&P- Finishing seasaltHomemade Chimichurri- 3/4 cup extra-virgin olive oil- 1/2 cup red wine vinegar- 1/2 cup Italian parsley (chopped)- 3/4 c. tablespoons fresh oregano (chopped)- 4 garlic cloves (diced)- 1 big shallot (diced) (or ½ large red onion)- 1 chili pepper (diced) (we have used (or ½ tsp. dried chili flakes)- Zest of 1 lime- Juice of 1 ½ limes Salt and pepper (to taste)

Instructions

1. Remove the venison from the fridge 1 hour before cooking, and allow the meat to reach room temperature.2. Set your smoker to 250°. We’ve used charcoal and hickory pellets, but maple and mesquite also work well.3. When the meat is at room temperature, you can tie it with a few pieces of butcher’s twine for more even cooking and to ensure that it retains its shape during cooking.4. Season the venison well with kosher salt and fresh cracked pepper, then inject melted butter all over.5. Smoke the venison for 60 to 90 minutes, or until an internal temperature of 125 to 130°F is reached.6. While the venison is smoking, prepare your chimichurri sauce. Simply mix all the sauce ingredients, adjust to taste and leave to stand for at least 10 minutes, but preferably more than 2 hours to allow all the flavours to develop fully.7. Once the venison has reached the required temperature, remove it and leave it to rest on a wire rack lined with aluminum foil for 10 minutes.8. After the restcut the venison into thin slices along the grain, season with sea salt and chimichurri sauce. ✔️Recette of Michael E.
