Watch“Canada in the Rough” chef Michael Higgins prepare this incredible recipe for black bear stew. This is a very simple way to enhance the wild game sausages you have in your freezer.

  • Preparation time: 10 minutes
  • Cooking time: 60-90 minutes

Ingredients

  • 4-6 game sausages (we used black bear in this video)
  • 1 red onion (chopped)
  • 1 yellow bell pepper (chopped)
  • 2 zucchinis (chopped)
  • 12 small potatoes (halved)
  • 3-4 garlic cloves (diced)
  • 1 sprig rosemary (leaves picked)
  • 1 can whole tomatoes (crushed with hands)
  • 2 teaspoons smoked paprika
  • Salt & pepper
  • Olive oil
  • Crisp bread

Instructions

1. Preheat smoker to 250F.2. Chop the vegetables and dice the garlic.3. Heat a large cast-iron skillet over medium-high heat, without adding fat. Lightly grill the onion, zucchini, bell pepper and potatoes, stirring often, for about 7 to 10 minutes.4. Once the vegetables start to turn chard-like, add the garlic, rosemary, S&P and a good drizzle of olive oil, stir well and cook for a few more minutes.5. Then add the can of tomatoes, crushing them with your hands, pour in the excess liquid from the can, stir well and bring to the boil.6. Add the sausages on top and drizzle with olive oil, then put them in the smoker and cook until the internal temperature of the sausages reaches 160°F, which should take about 60 to 90 minutes of smoking. Be sure to turn the sausages over after 30 minutes for even smoking.7. Serve with crusty bread to soak up all the sauce.
