Recipe

Preparation: 10 min (plus 2-3 days drying time)Cooking time: 12 minIngredients- Whole large duck with skin- Salt- Pepper- Garlic seasoning- Hot sauce- Prepared rice (Basmati with diced onion, celery and carrot)Instructions1. Remove the backbone of your duck using kitchen shears. Then break the breast bone with your hands so that the duck lies flat.2. Using a sharp knife, score the skin of the duck, without cutting the meat (if the bird is cold, this is easier).3. Optional: For a really crispy skin, salt the duck thoroughly and leave to dry in the refrigerator for 2-3 days, uncovered on a rack over a baking sheet.4. When you’re ready to cook, remove the bird 1-2 hours before cooking to let the duck come to room temperature.5. Remove any remaining salt. Season both sides with pepper and garlic seasoning.6. Heat your pizza oven to high (about 700°F) and place a dry 10-inch cast-iron skillet in the oven to heat at the same time.7. When ready, add the duck to the pan, skin side up, place in the oven and bake for about 12 minutes for medium doneness, aiming for an internal temperature of 125°F in the thickest part of the breast. Turn the duck during cooking to ensure even browning.8. Once cooked, remove the duck and place on a rack over a baking sheet. Allow duck to rest for 5-10 minutes before slicing.9.
