Lobster season is in full swing in Quebec! Here’s how to shell a cooked lobster. It’s so simple, there’s no reason to miss out!

1. Start by placing the lobster flat on its stomach on a work surface. Hold the body with one hand and with the other, detach the tail by turning it slightly.
2. Using your fingers, remove the dorsal fin at the end of the tail. Hold the tail upside down in your hand and with a pair of scissors, crack the tail. Remove the flesh, which should come away in one piece.
3. Loosen the two clamps and their joints by turning them. Using a knife, gently break off the shell of the claws. Loosen the thumb of each claw and remove the meat from all pieces using a lobster fork if necessary.
4. A little flesh is found in the legs. It can be extracted with a fork or a very fine pick.
5. After the feast, use the carcasses to cook a delicious lobster bisque.
